Easy Pan-Fried Lemon Herb Chicken Breasts (Lunch-Friendly)
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- 1/2 lemon, juiced
Instructions
- Prep the chicken: If the chicken breasts are thick, pound them gently between two pieces of plastic wrap to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
- Heat the pan: Heat olive oil in a large skillet over medium-high heat until shimmering.
- Cook the chicken: Add the chicken breasts to the hot pan and cook for 4-5 minutes per side, or until golden brown and cooked through. Use a meat thermometer to check the internal temperature, which should reach 165°F in the thickest part.
- Add finishing touches: Once cooked, squeeze the lemon juice over the chicken breasts and sprinkle with oregano, thyme, garlic powder, and onion powder. Let them simmer for an additional minute, allowing the flavors to meld.
- Serve: Enjoy the chicken breasts with your favorite sides, such as roasted vegetables, salad, or brown rice.
Notes
For added flavor, marinate the chicken breasts in your favorite marinade for 30 minutes before cooking.
You can substitute other herbs for oregano and thyme, such as rosemary, basil, or parsley.
If you don’t have fresh lemons, you can use 1 teaspoon of bottled lemon juice.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
This recipe is a great base for customization. Feel free to experiment with different herbs and spices to create your own flavor variations.
